Highland beef is 40% lower in fat than other beef and is lower in cholesterol than chicken, venison, codfish or buffalo (Commercial Testing Laboratory, Inc. in Colfax, WI.) We have a customer that when she picked up her second order of 100#’s of ground beef in 4 months. She said that she has high cholesterol, however she just had her blood work done and her bad cholesterol was down & her good cholesterol was up, she believes it’s because of eating highland meat. HIGHLAND BEEF IS HIGHER IN PROTEIN THEN CHICKEN. Highland is 20.7 to chicken 17.9 (g per 3oz. of meat).
